Mince Curry Recipe

INGREDIENTS 1/2kg beef mince washed and drained.1 onion diced finely1 tomato diced finelyHeat oil and fry onion till golden brown.Then add 1 teaspoon chilli garlic paste and ½ teaspoon ginger garlic.Add in mince,1 teaspoon dhana,1 teaspoon jeeru (cumin),½ teaspoon tumeric,1 teaspoon salt,½ teaspoon crushed red chillies,½ teaspoon fine red chillies (add chillies and salt to taste, measurements are approximate)1 packet tomato paste and diced tomato METHOD Cook till done.Can be served with roti,I add some frozen mixed veggies as well and saffron.For mince, mash and spaghetti, omit frozen mix veg and saffron.

Durban Fish Curry Recipe

INGREDIENTS 1- 1 ½ kg Fresh Fish (cleaned,washed and spiced separately as for frying)¼ Cup Oil1 Large Onion (finely chopped)3 Large Tomatoes (chopped,grated or liquidized)Few Sprigs Curry Leaves1 Cup Tamarind Juice*4-5 Cloves Garlic (pounded roughly)*1 teaspoon Whole Methi (Fenugreek) (fenugreek seeds)*1 teaspoon Whole Rye (black seed) (mustard seeds)*1 teaspoon Whole Jeera (cumin seeds)3 teaspoon Red Chilli powder1 teaspoon Haldi (tumeric powder)1-½ teaspoon dhania (coriander) powder1-½ teaspoon Jeera powderSalt To TasteFresh dhania (coriander)(Coriander Leaves) finely chopped forgarnishing… METHOD Heat oil in a thick bottom wide pot..When hot add onions and spices marked with (*)..When onions become translucent and spices stop popping..Add tomatoes and let cook a few minutes until oil appears on top.Now add the rest of the spices including the curry leaves.Let it braise 4 about 2 minutes.Then add tamarind juice and also 1-2 cups water.Allow to cook for about 5 minutes.When it starts sizzling, slowly place pieces of masala fish into hot gravy.Lower heat and let fish cook and gravy thicken +/- 20 minutes.Lastly garnish with fresh chopped dhania (coriander). Serve with Rice, Roti OR Pap. INFO & TIPS U can also add brinjal, green mangoes or green chillies 2 the gravy… Add the above-mentioned ingredients wen u adding the tomatoes….
